“Pastry in Paris” at LCB!!

Paris is the best city in world for me! i absolutely adore it and i am always looking for a reason to go back.

This time it was to learn pastry at the le cordon bleu !!!!   I had butterfies in my stomach to a point where i was almost sick on day 1 ! it is just like going back to  kindergarten , we had a uniform with chef shoes which have metal toe protection! we need them for the dangerous french kitchens at school!

It was hectic  and quite intense but loved every minute of it! learnt the classic french desserts like the french apple tart, Normandy tart, Madeleines, Saint Honore  to name a few.

The chefs at school were intimidating at 1st but what was i expecting at the cordon bleu here in Paris! they dont speak english so it can get complicated to ask questions but we managed with exaggerated expressions and hand gestures.

I finished my Level one and now cant wait to get back to school in June!

Super Sweet Diwali !!!

Diwali popularly known as the “festival of lights,”  is one of the main festivals celebrated across India , it is the time of the year when everyone is indulging , be it shopping for clothes or new homes,  food , card games……

Diwali to me is that time of the year when there are unlimited sweets in the house…….and this year we made a whole buffet  of delicacies.

These recipes have been passed on from generations

A hundred pieces of each, yes it is a lot of work but we worked as a team of 4 . Most of it is like an assembly line and this makes it quick and easy. And we had a lot of fun with friendly banter to keep us company!

iPie !!!! Apple pie :)

Apple pie to me is the ultimate comfort food that can cheer you up and make you smile 🙂 , you will find this on almost every menu across the world. It is one of those desserts which are evergreen and if made right can take you on a heavenly sweet ride. There are different variations to “The classic Apple pie “, below is one that works for me

This Apple pie recipe is made from scratch.

It is easy , hassle free and the pie is as a pie should be , flaky crust and a warm rich  Cinnamon -Apple filling inside.

Prep Time: 15 to 20 mins

Rest : 1 hour 

Bake Time 20-25 mins

Serves 6 

Things you will Need:

For the Short Crust Pastry:

  • 250 gms Flour
  • 75 gms Powder Sugar
  • 130 gms Cold butter
  • 40 ml  Ice Cold Water
  • Pinch of Salt.
  • 2 Tsp milk for glazing the Pie

Sieve flour, add chilled butter & sugar+salt and rub the flour lightly with your finger tips till it resembles crumb like texture.

Next add the cold water and knead into a soft dough.

Once your dough is ready, cover it in cling foil and let it rest in the refrigerator for 30 mins to 1 hr.

While the dough rests , we shall make the Apple filling,

For the  Apple Pie filling you will need :

  • 3 Large Apples
  • 75 -90 gms Brown Sugar
  • 1 tsp cinnamon powder
  • 1/2 tsp nutmeg powder
  • 20 gms of sweet biscuit/cake
  • 20 gms cashews
  • 20 gms Raisins
  • 1stp lemon juice.

Cut the apples in thin slices. Add sugar, cinnamon, Nutmeg and lemon juice, cashews & Raisins , cook on low flame for 3-5 mins until the apples are slightly cooked. Let it cool.

Preheat the oven to 200 degrees

Take the rested dough and divide it into 2 portions , one has to be slightly more than the other. Now roll the larger dough for the base into a 1/8 inch thick sheet. Place it in a 9 inch  pie dish. Lets the dough cover the sides.

Now add the cooked apple filling along with crushed cake/ sweet biscuit crumbs and cover the pie by rolling another sheet of the dough.

You can also be a little more patient and cut strips of the dough sheet and place them on top of the pie.

Once you have your pie ready, take  2tsp of milk in a bowl and glaze the top with a brush. this will give the pie a golden brown effect after it is baked.

Voila ! your pie is ready to be served!

Mine was served with Thick Golden Syrup and Vanilla bean Ice Cream…..

Half… A Hershey’s Dark Chocolate Cake!!

I have my sisters kids over for the weekend and my 4 year old nephew demanded a Chocolate Cake this morning and the first recipe that struck my mind was the HERSHEY’S Dark Chocolate Cake. It is one of the easiest and full proof cakes I have baked. You simply cant go wrong with this one! ( just don’t forget the Baking Soda)

Before you scroll down any further, don’t be surprised to find pictures of  just half the cake as the other half was eaten before I could Ice it 😛

I followed the recipe on the Tin/ web link with a few alterations to make it even yummier


I added the below ingredients to the recipe :

  • 1/2 extra Egg
  • 1/3rd cup extra  Powder Sugar
  • 1/2 Cup chopped Walnuts
  • 2 table spoons Dark Rum

I added rum before stirring in the hot water. I poured the cake batter into the tin and then sprinkled the walnuts on top of the batter mix. The batter is very runny so don’t be alarmed when you see it. Once baked the cake will be Light and moist.

Hershey's Choco Cake

I made a Creamy Chocolate Sauce with a dash of Coffee Liquor to pour over the cake , added a few colourful sprinkles  and it was ready to be served!

Walnut n Raisin Fudge Brownies

Have you been looking for the absolutely Perfect Brownie recipe??

Well, look no further as I have found the best one and it is so good that you just cant stop eating them.

These brownies just disappear no matter how many I Bake.

Prep Time: 15 to 20 mins

Bake Time 30 mins

Makes 20 brownies

Things You will Need:

  • 90 gms butter, cut into pieces
  • 225 gms Dark or semisweet chocolate, chopped
  • 170 gms Sugar (Castor)
  • 1 teaspoon vanilla extract
  • 1 teaspoon Baking powder
  • 3  Eggs
  • 40 gms  all-purpose flour
  • 1 cup (about 125 g) Walnuts & Rasins coarsely chopped
  • 2 table spoons Dark Rum

Preheat oven to 175°C.  Line a 9-inch square baking tin with butter paper,leaving an inch overhanging on each side.

Lightly grease the paper with butter and set aside.

Whisk eggs one at a time until frothy and light and add vanilla extract to it.

Melt the butter in a medium saucepan over low heat.Add the chocolate and with a spatula, stir over low heat until the chocolate is melted and smooth. Remove from the heat.

Whisk in the sugar until well combined.  Add in the egg and vanilla mixture along with the Rum.Lastly add in the sifted  flour  and baking powder and whisk for 2 minutes or until batter loses its graininess and becomes smooth and glossy and pulls away from the sides of the bowl.

Add the chopped nuts and with the wooden spoon, stir to combine.

Pour batter into prepared baking tin and  sprinkle with a few nuts on top, bake for about 30 minutes, until the center feels almost set, do not over-bake.

Enjoy ! 

PS: They taste even Better with Vanilla Ice-cream!!
